METHOD 01: MICROWAVE
Yes, believe it or not, a quick zap in the microwave works great at keeping our meats tender and moist. Best for smaller cuts of meat, slices and NOT for whole briskets.

  • Defrost if still frozen

  • Slice meat

  • Place on plate with a wet paper towel over it

  • Cook for 10seconds to 1 minute depending on size

METHOD 02: STOVETOP STEAM

  • Defrost if still frozen

  • Slice meat and shallow steam the slices to reheat them in a small pan over low heat with enough water just to cover the bottom of the pan. Use a pan lid to trap the steam and cook for 3-5min. Checking often for tenderness and temp.

RE-HEATING INSTRUCTIONS

METHOD 03: OVEN “Low and Slow”
Ideal for larger cuts of meat, whole racks of ribs, and whole briskets and pastramis.

  • Defrost if still frozen

  • Pre-heat oven to 300F

  • Remove brisket from packaging and wrap in foil

  • Put in a pan or on a sheet tray and place on a rack in the middle of the oven

  • Cook until meat thermometer reads 165 in the thickest part of the meat

  • This could take 90+ minutes depending on the size of the meat. Small portions should only take around 20-30 minutes.

METHOD 04: “Boil in the Bag”
This method is only applicable for vacuum sealed products.

  • Defrost if still frozen

  • Leave meat in the vacuum seal and put in a stock pot large enough to hold the entire piece and completely cover with cold water.

  • Bring up to a simmer for 30 minutes.

  • Use a meat thermometer temp the thickest point of the roast - anything between 140 and 160 is ideal for the reheat. You can poke through the bag to take the temp from the center cut of the meat with minimal water intake.


STORAGE & THAWING

Meats can be stored in the refrigerator for 10-12 days. If you are freezing any of the meat we recommend storing it in a freezer-safe Ziploc bag or vacuum sealing the product.

To thaw, allow the meat to defrost in the fridge for 12-24hrs depending on the size of the product. To quicken the process, place in a pot or bowl in your sink and allow cold water to pour onto it till thawed.
