Our smoked meats are 100% Texas raised, antibiotic and hormone free. We are dedicated to sourcing the highest quality beef possible. All products are smoked solely with post oak, without the use of propane or electricity. In the Central Texas tradition, the brisket is seasoned with salt and pepper only, and our pastrami is cured in house every week.
